Spice up your metabolism with this recipe which will not only provide a healthy dose of muscle-building protein and metabolism-boosting chilli, it will also tantalise the taste buds. The great thing is that this meal can be made in large batches and frozen, so whenever the craving strikes, it is ready to go. What better way to heat up the winter days than with a delicious bowl of high-protein Spicy Chicken Chilli.


SPICY CHICKEN CHILLI INGREDIENTS


750g ground chicken
1 tablespoon coconut oil
1 cup red onion – chopped
1 cup green pepper – chopped
2 cloves of garlic – finely chopped
3 heaped tbsp chilli powder
2 cups tomatoes – crushed & canned

1 tbsp chicken stock
1 tbsp apple cider vinegar
1 tbsp brown sugar
125 g Mushrooms
1 tbsp Tabasco sauce
1 tablespoon salt
2 cans dark red kidney beans – drained



DIRECTIONS:


  • Place the coconut oil in a dutch oven and heat over a high heat.
  • Add the red onion, green pepper, jalapeños and garlic.
  • Turn the down to medium and cook until the onion becomes tender.
  • Add the ground chicken and stir to break up the lumps.
  • Cook until the chicken loses its pink colour.
  • Stir in the chilli powder and cook for 1 minute.
  • Stir canned tomatoes, chicken , tabasco , sugar, vinegar and salt.
  • Reduce the heat to low and cover.
  • Stir the mix often until the chilli is thickened. This should take about 40 minutes.
  • Stir in the red kidney beans and cook until heated through. Roughly 15 min.
  • Remove the lid and simmer for a further 15 minutes.
  • Top with garnish of your choice.
  • Enjoy!
