So it’s Sunday afternoon and you’re lazing about on the couch, not in the mood for the same old diet food you have been eating all week long. Then why not give this juicy lamb burger a try. It may not be the quickest meal to slap together but if you are on the ball, you can have this done in 20-25 minutes and believe me, it is so worth it.


THIS DELICIOUS JUICY LAMB BURGER RECIPE CATERS FOR 4





INGREDIENTS


  • 400g Topside Lamb Mince
  • 1 Onion
  • 2 Garlic Cloves (crushed)
  • 1 Egg white
  • 1 Whole egg
  • 1 Loaf of Wholegrain or Rye Bread
  • 1 Teaspoon Basil

DIRECTIONS


  • Add Salt and Pepper to Taste
  • Optional – Add any other seasonings of your choice


OUR JUICY LAMB BURGER SAUCES



TZATZIKI


  • 1 Cup Fat Free Greek Yoghurt
  • ¼ Cucumber
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon fresh chopped dill
  • 1 Teaspoon Fresh Chopped Chives

  • Add Salt & Pepper to Taste

HUMMUS


  • 400g can Chickpeas (rinsed & drained)
  • ¼ Cup Lemon Juice
  • 2 Tablespoons Tahini
  • 2 Tablespoons Water
  • 1 Teaspoon Ground Cumin
  • ½ Teaspoon Ground Coriander
  • 1 Small Garlic Clove (crushed)

  • Add Salt & Pepper to Taste





HOW TO MAKE THIS DELICIOUS LAMB BURGER


JUICY LAMB BURGER PATTIE

Dice onion and combine with the lamb mince, crushed garlic, basil, salt and pepper. Put 2 slices of wholegrain bread in the food processor and dice until it becomes fine bread crumbs. Add the crumbs and eggs to the mince and mix in well by hand. Form burger patties about 10cm in diameter and 2cm thick with the mixture. This should make about 4 patties. Fry in a pan with non-stick spray.


TZATZIKI

Remove the seeds and finely dice the cucumber. Drain the excess liquid from the cucumber in a strainer and sprinkle with a bit of salt to help release the liquid. You may want to use the back of a spoon to help squeeze out any excess liquid. Combine the cucumber, garlic, yogurt, salt, pepper, lemon juice, dill and chives.


HUMMUS

Place the chickpeas, lemon juice, water, tahini, coriander, cumin and garlic in a food processor and process until a smooth paste forms. Taste and season with salt and pepper. If the hummus is too thick, you can add a little water or lemon juice to help thin the paste.


TO COMPLETE THIS JUICY LAMB BURGER

Toast the number of slices you require. Use the hummus to ‘butter’ the toasted bread. Place the burger pattie on the bread like you were making a sandwich. Add the tzatziki to the top and close with another slice of toasted bread. If you want you can add other garnish like lettuce, cucumber, tomato etc.


Although this greek style lamb burger is healthy, it is high in calories and should be considered as a ‘cheat meal’. However, it still has far less calories than junk food, making this delectable treat far more appealing.
