Long periods of dieting can really take its toll on the taste buds. So why not satisfy that sweet tooth with these Cookie and Banana Protein Muffins? Quick and easy to prepare, these protein muffins make the ideal nutritious weekend cheat.



INGREDIENTS:


  • 4 egg whites
  • 2 whole eggs
  • ½ large banana
  • ½ cup of oatmeal
  • ¼ cup of almond milk
  • 2 teaspoons of xylitol
  • ¼ teaspoon vanilla essence
  • 2 tablespoons of coconut flower
  • ½ teaspoon of baking soda
  • 1 Supashape protein cookies

DIRECTIONS:


Add all the ingredients, except the Supashape protein cookie, into a blender and blend until smooth.
Pre-heat your oven to 180 degrees celcius.
Coat your muffin tin with non-stick cooking spray.
Pour the mixture into the tray until the mix fills the ‘cup’ up to about 2/3’s of the way.
Break up the Supashape protein cookie into small pieces and drop a few chunks into each muffin.
Place the muffin tin the oven and bake for approximately 20-25 minutes.
To test if they are done, stick a fork in them and if a little bit comes out on the fork, they are ready to come out of the oven.
Allow to cool and enjoy!!!


These protein muffins have saved my life many a time when I was about to head out to the shop and buy my favourite cake from the local bakery, but then remembered I had these stored in my cupboard. The great thing is that you can also make them in bulk and freeze them. Only a few min in the microwave and you have a ready-to-eat treat any time of day, or night. Just remember, everything in moderation.
